Make Your Own Gourmet Fudge

When you crave for chocolate, there is one simple and easy to make recipe you simply cannot go wrong with. Gourmet fudge doesn't have to be complicated, the secret is in using the finest ingredients, and, of course, in treating your chocolate with respect. If you overheat it, it will lose its quality, shine and some of its taste.

So, you could start with this one. Take one cup sugar and melt it with a few spoons of water over low heat. It should become syrupy. Now it is the time to add three cups of your selected choco chips, dark, milk or white. When everything is melted and smooth, add some butter in, approximately half of a cup. Pour into previously lined pan and leave it to cool.

Previous recipe was made without condensed milk, but most recipes you will find use condensed milk, sweetened or unsweetened. One can condensed milk goes with three cups of chocolate chips, and this makes this basic recipe. You can simply melt these ingredients together in the microwave, and that's it. Now you can add a few spoons of peanut butter in, with some chopped peanuts as well, if you like, and spread the mixture into the pan. Leave it in the fridge until hard enough for serving.

So, now you know how to prepare this basic peanut fudge. It's easy to make it more interesting. For example, you could simply sprinkle this warm mixture when you pour it into the pan with white chocolate chips or with crushed peanuts. These ingredients really love each other, and taste great together, but you can add anything you want.

Caramel fudge can be easily prepared as well. Pour two cups sugar into the pan and caramelize it over low heat. Pour one cup condensed milk in and stir. Combine this mixture with three cups dark chocolate, melted. You can use this mixture as it is, or add some butter, peanut butter, nuts, vanilla syrup or anything else you can think of.

As it was said before, you will need one can of condensed milk for approximately three cups of choco chips. The easiest thing to do is to melt these ingredients together in your microwave, and make this basic fudge. Now you can make different combinations, or simply pour it into your lined pan as it is. You could also pour different layers on, and sprinkle it all with decorative chocolate chips or nuts.

When you want to play with colors, simply use white chocolate instead of dark. This way you can make it all green, for example, or red, blue or yellow. For Saint Patrick's Day, add mint extract or pistachios, and some food color if you want more intense nuances. Cherry liqueur will make it all nicely red, and it's easy to add a few dried cherries as well, nicely chopped.

Spice up your dessert with chili, this ingredient simply adores dark chocolate. If you use unsweetened milk and bitter dark choco chips, you should add more salt to make your mixture tastier. In any case, adding some salt is always a good idea, this will make all the flavors more intense.
