People are into eating foods and specially those from other countries due to their wants of trying to eat something new. Luckily, visiting other countries is not necessary for tasting these dishes because cities such as Baltimore have foreign restaurants available. But some restaurants are not offering food with authentic taste to what it originally has back at their country. They tend to change the flavors to fit in with the locals of the area such as in Baltimore, MD and other cities in the US. One of the things you can do is to check if the place is crowded with patrons and more specially if there is a waiting list outside. This would show that they serve delicious food because people want to come inside. If the majority of the patrons are Chinese then that is better because it indicates that the taste is identical to what they have back at home.

This is because people who are traveling abroad would look for a taste of home so they would search for one serving the most authentic tastes. See what they are eating and order the ones that look delicious to you. Doing this would provide you with a food that Chinese people like and have the bigger chance of having real flavors.

A place that have many tables but with not that many guests have food that probably are not that fresh anymore. Likewise, those which offer takeout and have no tables will likely be not creating authentic dishes. Eating somewhere clean is an important thing no matter the kind of restaurant, so avoid those which does not look clean.

Research the regional specialty the restaurant has because with a place as large as China, its different areas have mastered different dishes. Specialties of northern region are dumplings, noodles and steamed buns because these areas commonly grows grains. Southern region have vegetable dishes and rice as their specialty with some international influence mixed to them.

The southern region borders the sea making their specialties based on sea foods such as steamed fish and a light cooking style with copious ginger being used. Southwestern areas are landlocked making it not a good idea to order sea foods though they have freshwater variety still. Their dishes are spicy and prickly ash is used to flavor them leaving the tongue slightly numb and tingling.

Some restaurants tend to have names that are based on the region where they come from but beware of those using the names of cities. They may not actually represent the real taste of that city but are just using them for brand recognition. The name of a dish is not a good representation also but instead look at its ingredients and how it is cooked.

The original names tend to have more poetic meaning than the literal translations. Some of them have colorful history which describes how they taste. And avoid from buffet restaurants because the freshness usually suffers from the items being heated for a long time.
